Bob’s Red Mill Vegi Soup Mix

This is seriously the best thing I’ve ever discovered! (for now).  It’s a dried mix of lentils, beans, and tiny alphabet noodles and it’s like the most

beautiful vegan canvas you’ve ever encountered (on a cold day that calls for hearty and satisfying soup).


The instructions on the package are pretty easy: 1 cup soup mix to 4 cups water. Add your fave veggies. Bring to a boil, reduce heat, cover and simmer for 1 hour.The easiest way to get your veggies in there is to wash, roughly chop (to fit into your food processor) and then let

your food processor pulse it into tiny little pieces.

I have discovered you can mix it up wonderfully by changing the vegetables and seasonings that you put in:

To make it “Indian Style” just add your favorite indian seasonings, like 1 tbsp Turmeric, 1 tbsp cumin, 1/2 tspn dried mustard powder, a pinch of cardamom, etc – along with extra onion and garlic in the food processor!

To make it “Thai Style” simmer it with a stalk of Lemongrass, a touch of soy sauce, and add 1/2 cup of canned coconut milk for the last 5 minutes… chop fresh basil and add right before serving.

To make it “Asian Style” add roughly chopped Bok Choy, thinly sliced carrots, and julienned bell peppers for the l
ast 5 minutes. Add extra veggie broth, and serve with bean sprouts on top.

A quick and easy dinner – just serve with salad and your favorite bread stick!
